Orange Alert Habanera Hot Sauce

1 onion, chopped, 2 tablespoons garlic, minced, 1 tablespoons olive oil,  (Put on gloves and mask) (Seriously!) (Do NOT touch inside of Habanero pepper c bare hands) (Mask is strongly advised, especially if you increase the volume of recipe). , 12 habaneras, stemmed & seeded, 2 Tomatoes, peeled, ½ teaspoon turmeric,  1 teaspoon cumin , Pinch coriander, ¼ teaspoon dill weed, ½ cup vinegar, ¼ cup rum or tequila, ¼ cup limejuice, 1-teaspoon salt , 4 – 5 Mason jars or equivalent............. Ø      

Sauté onions and garlic in oil over medium low heat until soft but not brownØ       .....In a blender, puree the vinegar, limejuice, rum, salt, onion, garlic, all peppers, turmeric, and coriander.Ø       .....Transfer mixture to a pan.Ø       .....In a saucepan, bring all ingredients to a boil.... Simmer until desired consistency is achieved (usually 15-30 minutes).

Ø       .....Place jars in pan of simmering water, and allow to heat....  Pour contents into jars and allow the filled jars to sit in the simmering water for 10-15 minutes....  Turn off heat.....   Place lids on jars (secure, but not tight).....  Remove and tighten lids as jars cool...... 

Modifications:  This is a VERY hot sauce, and adjusting amount or type of peppers is easily done....  May change to Cayenne, jalapeno, etc depending on desired heat....  Spices can be easily altered to taste.... 

Cleanup:  Ensure that afterwards you include bleach in the washing of any utensils or cookware used in preparation....  Otherwise, tomorrow’s soup, oatmeal, cereal or Margarita may include a special surprise.
